The beans come from the Ambanje region in the North East of Madagascar and are cultivated by 1,200 small producers: notes of red fruits, raspberries, good acidity on the attack. Sweet roasted notes on the finish and little bitterness.
This chocolate is emblematic, developed by Patrick Roger in collaboration with the Valrhona engineering team. This chocolate is used for the coating of all our miniatures (chocolate bonbons).
